It not only eliminates the dreaded kitchen congestion (you know, when everyone is breathing down your neck when you’re just trying to get that final dish on the table), but it also keeps the house cool on an already hot day and reduces the number of dishes to wash after the party is over.

It has everything you need: a protein-packed quick-cook main dish, grilled in-season summer veggies drizzled with a finger-licking-good sauce, and a sweet, trendy treat: Frosé. Yes, that’s right-frozen rosé wine.
Chicken Spatchcocked
Butterflying, also known as spatchcocking, may sound elegant, but it’s one of the quickest and most effective ways to cook an entire chicken. The backbone is removed from the chicken, and it is flattened before being grilled under the weight of two bricks, allowing it to cook rapidly and evenly. The homemade rub can be created ahead of time and kept in an airtight container until ready to use. On indirect heat on the grill, the chicken will cook for about an hour. While the chicken is resting, re-heat the grill and cook some vegetables.
Veggies on the Grill
You can prep your vegetables for the grill while the chicken is cooking. One of the best ways to take advantage of summer’s bounty is to grill veggies. In a large mixing bowl, combine the tomatoes, eggplant, squash, peppers, and scallions, along with the oil, salt, and pepper. Grill the vegetables until tender and slightly browned while the chicken is resting. Drizzle a zingy vinaigrette over the salad before serving.

Get in on the current summer craze and dish up some frosé as a little frozen treat to complete out this BBQ menu. Sweet strawberries and sparkling pink rosé wine combine to make a delectable frozen granita. There’s no need for additional equipment; simply freeze and scrape with a fork. Also, resist the urge to add more wine because too much alcohol can prevent it from freezing. You can make this ahead of time and freeze it for up to a week. Serve with strawberries in chilled glasses.
